For Naan
Ingredients:
2 cups Plain flour/self raising flour (i mixed both)
2 Boiled & Mashed potato
1 tbsp yeast
Salt to taste
1 tsp sugar
3 tbsp Yogurt
1 tbsp softened butter
1/4 tsp baking powder
Water for kneading
Ghee or melted butter to brush ( Optional.. but i used low fat butter& believe me the taste was yummilisious )
Directions:
Put the sugar, yeast and water in a small bowl and mix until the yeast is dissolved. Let stand until it gets foamy, about 10 minutes. But if you are using an instant yeast then add as it is.
Now mix together Flour,Yeast,salt,Sugar,bak
Dump in all dry ingredients if needed add more water or if sticky add flour and make a soft dough and cover with plastic or damp cloth. keep aside until double in size .
Now divide into 3-4 equal size balls or as u need to make naan.Flatten them don't make too thin.Let them rise for 10 min then grill them on high heat from both sides until done or make it on tawa like roti or paratha.At the end bush with butter & serve with any curry or with aloo chana masala in breakfast.
For Aloo Chanay
Khatta Aalu Chana Masala (Sour potato and garbanzo curry)
Ingredients:
1 can chickpeas (garbanzo) drained (14 oz can)
2 medium potatoes peeled and cubed
1 medium onion sliced
2 tablespoons oil
1/2 cup juice from small lime sized tamarind
1/2 teaspoon each of salt, chilly powder, turmeric
2 green chillies slit
Directions:
In a pressure cooked heat oil and fry the onions till they become translucent. Add green chillies and fry for a couple of minutes. Add the rest of the ingredients and cook for two whistles. After the steam escapes open the cooker and simmer till the gravy becomes thick. Garnish with cilantro and serve hot with Kalonji roti or Roghni Roti/Naan.
